Risotto with dried flowers, strawberries and Vinsanto sauce

Ingredients for 4 people
250gr rice (Arborio or Carolina) / 3 cloves of finely-chopped garlic / ½ teacup finely-chopped fresh onion / 1 cup fresh cream / ½ cup olive oil / ½ cup white or rose wine / 50 gr cow butter / 4 tablespoons of grated parmesan / 1 cup fresh finely-chopped strawberries / 1 cup dried flowers

In a frying pan saute the rice with the olive oil, garlic and onion for 3 minutes. Then add the wine and continue boiling for 2 more minutes adding warm water little by little. In the last 3 minutes we add the flowers, fresh cream, butter and parmesan until the rice becomes mushy. Place into the plate and garnish with strawberries and the Vinsanto sauce.

For the sauce

250gr vinsanto wine / Grinded cinnamon, clove, nutmeg, pepper, salt / 1 teaspoon corn flour

Boil all ingredients together for 3-5 minutes (so that the alcohol burns off), strain and add the corn flour as long as the mixture is still hot. Mix well until the sauce thickens.
