Fava

Mrs Flora Karamolegou cooks one of the most emblematic dishes of the island at the Atlantis Restaurant, in Perissa. Try preparing the traditional fava dish of Santorini.

 

Ingredients

 

500 gr fava
1 onion
A little oil
Salt, pepper

 

Instructions

 

 

Rinse the fava beans and boil them in plenty of water. Remove the foam and add the onion (cut in two), salt and pepper. Let the fava boil on low heat for about 60 minutes, stirring it frequently. When thickened, remove from heat. Let it cool in a plate and serve it with a little oil, onion and caper.
