Antonis Anapliotis and his mother, Anna, prepare traditional Santorinian fava at their restaurant, Aegialos, in Exo Gialos, located right by the sea.
½ kg dried fava beans
1 big onion
1 levelled tbsp salt
½ tsp pepper
1 glass of olive oil
Place fava beans in a large pot, add water to cover by 3 inches (2lts) and bring to boil. Reduce the heat to low and simmer, skimming often. In another pot, brown the onion with salt and pepper. When fava beans come to soften, add onion and let boil for an hour stirring occasionally in the beginning and continuously during the last 20 minutes.
