Christos Papageorgiou, chef of the Elia Restaurant of Bellonias Villas in Kamari, serves hot fava balls accompanied with cool squeak salad –a summer and fully Santorinian fava dish cooked in a different way.
Ingredients
250 gr fava
750 gr water
1 medium-sized onion
3 slices of French toast bread
1\2 bunch of parsley
3 sage leaves
Flour for breading
Instructions
Boil the fava at low temperature until all the water runs out, remove from heat and let it cool well. Mix the fava with other ingredients in a bowl and shape into small balls. Bread fava balls with the flour and fry in oil at moderate-high heat for 3 to 4 minutes.
Squeak salad: You need: squeak (fillet), tomato, parsley leaves, olive oil, lemon juice, arugula and radish. Cut the ingredients in the size of your preference and mix them all together well..
